Vegetable frittata

4 cups (1 l) diced vegetables (your choice)

6 eggs

2 tbsp. (30 ml) vegetable oil

1 onion, chopped

1 garlic clove, chopped

Steam 4 cups of your favourite vegetables. Frozen vegetables are ready sooner. Beat
6 eggs and season with salt and pepper.

Heat 2 tbsp. of oil in a frying pan, then brown 1 chopped onion and 1 clove of chopped
garlic.

Add the steamed vegetables and cook briefly.

Pour in the eggs and cover the pan. Cook until the eggs are firm.

In a baking dish, broil the frittata until it’s golden brown on top.
For a variation, you can also use ham and cheese.
