Scalloped potatoes recipe

  • 6 medium-sized potatoes, peeled and thinly sliced
  • 1 onion, chopped
  • ¼ cup (60 ml) butter
  • 3 tbsp. (45 ml) flour
  • 2½ cups (625 ml) milk
  • Swiss or Parmesan cheese (optional)
  • Salt and pepper
  • Ham, in strands
  1. In a frying pan, melt 3 tbsp. butter at low heat.
  2. Add onion and brown.
  3. Incorporate flour. Cook at low heat while constantly stirring until mixture is smooth and frothy.
  4. Gradually add milk while constantly stirring. Bring to a boil, then reduce heat and let simmer for 5 minutes while stirring the mixture.
  5. Salt and pepper to taste, and add grated Swiss or Parmesan cheese (optional).
  6. In a buttered oven dish, spread a row of potatoes followed by a layer of sauce, then repeat operation twice more, finishing with the sauce. Add a few knobs of butter (1 tbsp.) or grated cheese.
  7. Cover and cook in oven at 350°F for about 1 hour, until potatoes are tender.
  8. About 15 minutes before end of cooking time, garnish potatoes with strands of ham, then cover and return to oven.
  9. Let cool for at least 5 minutes, then serve with a salad or steamed vegetables.
