Chili soup with ham recipe

  • 2 cups (500 ml) chicken or vegetable broth
  • 2 cups (500 ml) potatoes, peeled and chopped
  • 3 carrots, peeled and sliced into rounds
  • 1 onion, chopped
  • 2 tbsp. (30 ml) flour
  • 1 can (796 ml) tomatoes, stewed or diced
  • 1 tbsp. (15 ml) chili seasoning
  • 1 cup (250 ml) ham, diced
  • 1 cup (250 ml) corn, canned or frozen
  • 1 can (540 ml) red beans, drained (optional)
  1. Pour broth into a stewpot, then add potatoes, carrots and onion.
  2. Cover and cook at medium-high heat for about 10 minutes, until tender.
  3. Mix flour with a bit of tomato juice in the can. Stir to a smooth mixture.
  4. Add flour-and-tomato-juice mixture to broth. Simmer for 5 to 10 minutes.
  5. Add chili seasoning, salt and pepper to taste, then add ham, corn and kidney beans (if applicable).
  6. Simmer for another few minutes, then remove from heat.
