Oven-baked roast beef

  • 2 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 tbsp. (15 ml) vegetable oil
  • 1 tbsp. (15 ml) butter
  • 2 tbsp. (30 ml) Dijon mustard
  • 1 cup (250 ml) beef broth
  • Salt and pepper to taste
  • 2 twigs fresh thyme or rosemary
  1. Preheat oven to 325°F.
  2. In a bowl, baste roast with Dijon mustard.
  3. Heat oil in broiler pan over medium-high heat, then melt butter.
  4. Sauté garlic and onion.
  5. Put roast in pan and sear all sides. Salt and pepper to taste. Remove from pan.
  6. Pour beef broth in pan and add fresh thyme or rosemary. Reduce for 1 minute.
  7. Put roast in broiler pan and cook in oven for about 20 minutes per kg (for a medium-rare roast). If using a thermometer, cook until inside temperature reaches about 130°F.
  8. Baste roast throughout baking.
  9. Remove roast from stove and let cool for 10 minutes before serving.
