Meat loaf in devil’s sauce

Meat loaf:
- 1 kg ground beef
- 1 onion, finely chopped
- 1 clove garlic, minced
- 2 carrots, grated
- 1 cup (250 ml) milk
- ½ cup (125 ml) cheddar cheese, grated
- 1 egg
- 1 cup (250 ml) bread crumbs*
- 1 tbsp. (15 ml) Dijon mustard
- 1 cup (250 ml) Italian parsley, chopped
- 1 tbsp. (15 ml) salt
- ½ tsp. (2 ml) pepper
*You can substitute bread crumbs with crushed saltine crackers.
- Combine all ingredients in large bowl. Mix well, kneading vigorously.
- Place mixture in greased loaf pan and cover with aluminum foil.
- Bake in oven at 350°F for about 45 minutes.
- Let cool for 5 minutes before serving.
Sauce (to be prepared while the meat loaf is in oven):

- 1 clove garlic, minced
- ½ onion, finely chopped
- 1 tbsp. (15 ml) olive oil
- ½ cup (125 ml) unsweetened apple sauce
- 1 tbsp. (15 ml) white vinegar
- ½ cup (125 ml) ketchup
- 1 tbsp. (15 ml) brown sugar
- 1 tbsp. (15 ml) Worcestershire sauce
- 1 cup (250 ml) beef broth
- 1 tsp. (5 ml) corn starch mixed in 2 tbsp. (30 ml) water
- Salt and pepper to taste
- In bowl, combine beef broth, vinegar, ketchup, Worcestershire sauce, corn starch mix and apple sauce. Mix well and set aside.
- In saucepan, heat oil and sauté onion and garlic.
- Add broth mixture and let simmer over medium heat for 20 minutes.
- Salt and pepper to taste.
- Let simmer 1 minute and remove from stove. Add water as needed to thin sauce.
- Serve over meat loaf slices.
