Meat loaf in devil’s sauce

Meat loaf:

  • 1 kg ground beef
  • 1 onion, finely chopped
  • 1 clove garlic, minced
  • 2 carrots, grated
  • 1 cup (250 ml) milk
  • ½ cup (125 ml) cheddar cheese, grated
  • 1 egg
  • 1 cup (250 ml) bread crumbs*
  • 1 tbsp. (15 ml) Dijon mustard
  • 1 cup (250 ml) Italian parsley, chopped
  • 1 tbsp. (15 ml) salt
  • ½ tsp. (2 ml) pepper

*You can substitute bread crumbs with crushed saltine crackers.

  1. Combine all ingredients in large bowl. Mix well, kneading vigorously.
  2. Place mixture in greased loaf pan and cover with aluminum foil.
  3. Bake in oven at 350°F for about 45 minutes.
  4. Let cool for 5 minutes before serving.

Sauce (to be prepared while the meat loaf is in oven):

    25 minutes
  • 1 clove garlic, minced
  • ½ onion, finely chopped
  • 1 tbsp. (15 ml) olive oil
  • ½ cup (125 ml) unsweetened apple sauce
  • 1 tbsp. (15 ml) white vinegar
  • ½ cup (125 ml) ketchup
  • 1 tbsp. (15 ml) brown sugar
  • 1 tbsp. (15 ml) Worcestershire sauce
  • 1 cup (250 ml) beef broth
  • 1 tsp. (5 ml) corn starch mixed in 2 tbsp. (30 ml) water
  • Salt and pepper to taste
  1. In bowl, combine beef broth, vinegar, ketchup, Worcestershire sauce, corn starch mix and apple sauce. Mix well and set aside.
  2. In saucepan, heat oil and sauté onion and garlic.
  3. Add broth mixture and let simmer over medium heat for 20 minutes.
  4. Salt and pepper to taste.
  5. Let simmer 1 minute and remove from stove. Add water as needed to thin sauce.
  6. Serve over meat loaf slices.
