Cook tri-coloured pasta according to manufacturer’s instructions, then drain and let cool.

In a bowl, combine pasta, pieces of ham, cubes of cheddar, a diced tomato, and olives (optional).

Add in a mixture of olive oil and lemon juice, salted and peppered to taste, and mix well.

Place in an airtight container and refrigerate.
For a little variety, ask your children to add their favourite ingredients. Pickles,
red peppers, green onions … the possibilities are endless!
