So, you had a delicious chicken meal this week and managed to save some leftovers? The time has come to put them to good use in your loved one’s lunch box! Here are three food saving ideas as delicious as they’re economical:

If you like to garnish sandwiches and salads with bacon, cook it in advance and freeze it. This way, your bacon will be ready when you need it.

  1. 1. Place the breaded chicken strips or chicken pieces in hot dog buns.
  2. 2. Garnish with ranch (or Caesar) dressing and chopped lettuce.
  3. 3. Wrap in plastic wrap, then refrigerate.

It’s an interesting alternative to a sandwich! Leave it to the kids to choose the fruits and veggies they prefer.

  1. 1. Cook rotini or another short pasta according to the instructions, then drain and let stand.
  2. 2. In a bowl, combine the pasta with diced chicken, chopped celery and carrots, and peas.
  3. 3. Add ranch (or your favourite) dressing, and toss well.
  4. 4. Place in an airtight container and refrigerate.

To spice things up, ask your children to add their favourite ingredients. Olives, pickles, red peppers, cheese cubes … there are so many possibilities!

  1. 1. In a bowl, combine ground chicken, bacon bits and mayonnaise.
  2. 2. Garnish one or several pita breads with the chicken mixture, then add cheese and a few lettuce leaves.
  3. 3. Wrap in plastic wrap, then refrigerate.

If you wish, you could add a few tomato slices to the meal (wrap them separately in the lunch box). For young children, use small pita breads.
