Ham and cheese muffins

1¾ cups (475 ml) flour
¼ cup (60 ml) granulated sugar
2½ tsp. (12.5 ml) baking powder
1 tsp. (5 ml) salt
½ tsp. (2.5 ml) dry mustard
¾ cup (180 ml) milk
1/3 cup (80 ml) vegetable oil
1 egg
1 cup (250 ml) ham, finely chopped
1 cup (250 ml) cheddar, finely grated
In a large bowl, thoroughly mix flour, sugar, baking powder, salt and mustard.
In another bowl, combine milk, oil, egg and ham.
Make well in centre of dry mixture, then pour liquid mixture into it along with the cheese. Mix until achieving lumpy texture. Avoid overmixing.
Pour into muffin-pan cups either pre-greased or lined with paper baking moulds.
Bake in oven at 400°F for 15 to 20 minutes.
Let cool for at least 10 minutes before removing from moulds.
