Gyro-style pitas and Greek salad

Sandwiches:

  • Greek-style pita breads (enough for all guests)
  • 1 onion, finely chopped
  • 1 clove garlic, minced
  • 1 tbsp. (15 ml) vegetable oil
  • Roast beef, sliced into strips (to taste)
  • Juice of 1 lemon
  • 2 tsp. (10 ml) dried oregano
  • Tzatziki sauce to taste
  • 2 tomatoes, sliced
  1. In saucepan, heat oil over medium-high heat and sauté garlic and onion.
  2. Add beef strips and grill for 5 minutes.
  3. Add lemon juice and oregano. Cook for 2 minutes. Remove from stove.
  4. Spread tzatziki sauce on each pita bread. Top with beef strips and tomato slices. Roll into sandwiches.

Greek salad:

  • 4 tomatoes, seeded and diced
  • 1 red onion, finely chopped
  • 2 cucumbers, seeded and diced
  • 1 cup (250 ml) feta cheese, cubed
  • ½ cup (125 ml) black olives, whole
  • 3 tbsp. (45 ml) olive oil
  • 1½ tbsp. (22 ml) white whine vinegar
  • 2 tsp. (10 ml) dried oregano
  • Salt and pepper to taste
  1. In small bowl, whisk oil, vinegar and oregano with a fork until dressing is emulsified.
  2. In large bowl, combine tomatoes, onion, cucumber, cheese and olives.
  3. Pour dressing over vegetable and cheese mixture. Salt and pepper to taste.
