Chicken fried rice

2 tbsp. (30 ml) vegetable oil

3 cups (750 ml) cold rice

2 green onions, chopped

1 garlic clove, chopped

1 cup (250 ml) frozen peas and carrots

1 cup (250 ml) cooked chicken, diced

Heat 1 or 2 tbsp. of oil in a wok or large frying pan.

Add some cold rice , chopped green onions, 1 or 2 cloves of chopped garlic and 1 to 2 cups of frozen peas and carrots.

Fry until the rice begins to turn brown, then add 2 tbsp. of soy sauce and 1 to
2 cups of diced cooked chicken. Continue frying until the vegetables are tender
and the rice is hot.
For side dishes, serve imperial rolls or Chinese dumplings and stir-fried or steamed
vegetables.
