Chicken fried rice

Ingredients

  • 2 tbsp. (30 ml) vegetable oil
  • 3 cups (750 ml) cold rice
  • 2 green onions, chopped
  • 1 garlic clove, chopped
  • 1 cup (250 ml) frozen peas and carrots
  • 1 cup (250 ml) cooked chicken, diced
  1. Heat 1 or 2 tbsp. of oil in a wok or large frying pan.
  2. Add some cold rice , chopped green onions, 1 or 2 cloves of chopped garlic and 1 to 2 cups of frozen peas and carrots.
  3. Fry until the rice begins to turn brown, then add 2 tbsp. of soy sauce and 1 to 2 cups of diced cooked chicken. Continue frying until the vegetables are tender and the rice is hot.

For side dishes, serve imperial rolls or Chinese dumplings and stir-fried or steamed vegetables.
