1 potato per serving

Barbecue sauce

Grated cheese or cheese curds

Sliced cooked chicken

Heat some potatoes in the microwave for about 2 minutes, then bake them in the toaster oven until the skin turns slightly crispy (5 to 10 minutes).

Remove the potatoes from the oven, then cut an “X” in each potato to allow heat to escape.

Open each potato to expose the centre.

Garnish with barbecue sauce, grated cheese (or cheese curds) and slices of cooked
chicken.

Serve with a side salad.
For a variation, replace the barbecue sauce with green onions, bacon, green peas and sour cream.
